Beginning just before Easter this year, Mariposa starting packing 2lb bags of our GF Flour Blend for retail customers.
This blend can be used in any recipe that calls for flour. We typically adjust sugar lower in GF baking and sometimes adjust hydration higher because of the starch content. It can be trial and error - so we are posting a recipe for GF Pancakes that works using this blend. Good Luck and Happy Baking!

Storage and Handling
Store in airtight container until expiration date on bag.
Gluten-Free Pancake Recipe Serves 2
Dry Ingredients: Wet Ingredients:
¾ cup GF Flour Mix 1/3 cup + 1 TBSP milk
2 tsp baking powder 1 tsp apple cider vinegar
2 tsp cane sugar 2 TBSP melted butter
½ tsp kosher salt 1 egg
Directions: Combine dries into bowl and set aside. Measure milk then add apple cider vinegar to milk and stir. Pour milk into bowl of dries. Add egg and melted butter. Whisk to combine.
Heat lightly oiled griddle on medium high heat. Pour batter onto griddle to size of pancake desired. Brown on both sides and serve hot. Enjoy with syrup, butter or jam!
